How to make Spanish croquetas


Spanish croquetas are a delicious snack or appetizer made from a mixture of béchamel sauce and a variety of fillings, such as ham, chicken, cheese, or seafood. Here's a recipe to make Spanish croquetas: Ingredients:

  • 4 cups of whole milk

  • 1/2 cup of unsalted butter

  • 1/2 cup of all-purpose flour

  • 1/2 cup of finely chopped ham

  • 1/2 cup of grated manchego cheese

  • 2 cloves of garlic, minced

  • 1/4 teaspoon of nutmeg

  • Salt and black pepper, to taste

  • 2 eggs, beaten

  • 1 cup of breadcrumbs

  • Vegetable oil for frying

Instructions:

  1. In a large saucepan, heat the milk over medium heat until it comes to a boil. Remove from heat and set aside.

  2. In another saucepan, melt the butter over medium heat. Add the flour and stir for about 2 minutes, until the mixture is smooth and bubbly.

  3. Gradually whisk in the hot milk, stirring constantly to avoid lumps, until you have a smooth and thick béchamel sauce. Add the garlic, nutmeg, salt, and pepper to taste.

  4. Stir in the ham and grated cheese until well combined. Cover the saucepan and let the mixture cool for at least 1 hour or until it is firm.

  5. Take a spoonful of the mixture and roll it into a cylinder shape about 1 inch long. Repeat until all the mixture is used up.

  6. Dip each croqueta into the beaten egg, then roll it in breadcrumbs until it is coated on all sides.

  7. Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 350°F. Fry the croquetas in small batches for 2-3 minutes or until golden brown on all sides.

  8. Remove the croquetas from the oil with a slotted spoon and place them on a plate lined with paper towels to absorb the excess oil.

  9. Serve the croquetas hot with your favorite dipping sauce, such as alioli or tomato sauce.
